Raised in Kekaha, KauaŹ»i, Alex Amorin grew up hunting and fishing on the west side of the island, which ignited a passion for gathering and preparing ultra-fresh local ingredients. Under the guidance of his grandmothers, Amorin was exposed to traditional Japanese, Hawaiian, Chinese, and Filipino cuisines which further fed his appetite for cooking.This interest prompted him to enroll in the Culinary Institute of the Pacific in 1998. While attending school, Amorin enrolled in the American Culinary Federation, which exposed him to continuing educational courses, across the continental United States including an apprenticeship with Charlie Palmer at Areole in New York and classes at the Culinary Institute of America at Greystone. Amorin's passion for food has fueled his desire to explore the world of flavors. Throughout his studies and professional career, he embarked on extensive culinary travels to Europe, Australia, Canada, and Asia, which continues to influence his conception and execution of "ono" (delicious) tasting food.
