Hawai'i-born Executive Chef Curtis Horka started working in his family restaurants on Kaua'i at the age of 12 before joining the culinary arts program at Kaua'i Community College. After college, Horka traveled all the way to West Virginia to join the Green Brier Resort, which helped shape his craft and depth of knowledge. From there, he started moving back toward the Pacific with short stints working in Chicago, Illinois, and Phoenix, Arizona, where he worked at prestigious properties such as the Peninsula and Park Hyatt Hotel. Horka finally returned back to Hawai'i in January 2014, where he took on the position as executive chef at the Honolulu Coffee Company. His culinary philosophy bridges his love for coffee and working with farmers to seek out the finest regional and local ingredients. Horka produces a marriage between the coffee and his craft for cuisine. In addition to cooking, Horka's passion is to develop younger chefs to discover their talents in the same way in which he was encouraged. Whether it be through traveling to our farms and learning about how the coffee is grown or by demonstrating how to achieve perfect layers of butter and dough when producing croissants, Curtis believes whole-heartedly in staying active, continuously learning and always having fun.
